When the summer comes around I completely loose my appetite. Well, not completely – I eat ice cream all the time (despite my lactose intolerance).
So, whenever I realize that my stomach is going to die because of all that lactose, I make this yummy and refreshing strawberry yogurt.
- 200 g (1 cup) heavy cream
- 1 l (4 cups) yogurt
- 1 kg (4 cups) chopped strawberries
- coconut for decoration
Leave the cream in the refrigerator right up until you’re ready to whip it. Use mixer to whip it, gradually increasing speed. When you get stiff peaks – it’s done. Add yogurt to the mixture, and fold it with a wooden spoon. Lastly, add strawberries and fold it few more times until everything is incorporated.
*If your strawberries aren’t sweet enough, add sweetener of your choice or some vanilla extract.
Top your desert with some coconut flakes to finish it off! That’s it, leave it in the fridge for a quick and refreshing yumminess. 🙂
